Not so boring - Low-Carb life.

I was always afraid of starting a low-carb lifetsyle because of my addiction to sweets. Nothing like a good sandwich, a warm pastry and the occasional bowl of cereal with a pound of sugar stuck to the bottom of the bowl.

I was diagnosed with gestational diabetes during my last two pregnanacies. It was never a problem to change my habits while being pregnant. I had children to look after and I did it! Small, healthy babies! I even lost weight during both pregnancies.

Basil Pizza

We love this pizza and in fact it is my favorite. However I may forget and tell you that something else is my favorite. For now Basil Pizza is my favorite!

You will want to start out with my recipe here for  Homemade Pizza Dough.

I use Basil out of my garden to load this pizza up.

Hot and Spicy Hungarian Peppers for your White Pizza

This is my husbands favorite of all pizza toppings. It is hot and packed with flavor but simple to make. I am pretty sure that you can't mess this up. Go for it!

When shopping for Hungarian Peppers you will want to buy them full and without blemish. I buy the large ones and they can't be wrinkled.

Here is what you will need for this whatever you want to call it. I haven't decided on a name yet. I know it's good on toast or pizza.

Sweet Potato Casserole

3 c. cooked sweet potatoes, mashed

1 c. sugar

3 eggs, well beaten

1/2 c. cream (I use evaporated milk)

1 stick butter, melted

1Tbsp. vanilla (organic or pure)

Nutmeg honestly is an option. I do not use it but if you choose to use it 1/2 tsp.

Mix well; beat with mixer until smooth.


1/2 c. light brown sugar

1/2 c. self-rising flour

1/2 stick butter

1 c. pecans

Mix well or until mixture is grainy. Bake at 350 degrees for approximately 30 minutes.
